Stir-fried shredded vegetables with chilli is a very traditional Japanese dish, although the name Kinpira suggests that its origin is probably Portuguese. Gobo (burdock). a stringy, grey-coloured root vegetable, is normally used, but here parsnip provides a good substitute.
