Andrea Hirata Literary Journey

Mock Crab Soup
(Canh cua chay)

On the first day of the lunar month, many Vietnamese keep to the Buddhist tradition of following a vegetarian diet to gain merit. Many classic Vietnamese dishes are prepared by using tofu or taro as a meat or fish substitute, and often they are formed to closely resemble the meat they are replacing.

Frog with Lemongrass and Chilli
(Ếch xào sả ớt)

It is often assumed that the French introduced frogs to Vietnamese cuisine, but we like to think that it was the other way around. Vietnam's millions of paddies not only produce the country's staple, but have always been a rich source of protein, providing eels, crabs, snails and frogs.
