Sardines Marinated in Vinegar and Chilli

Nanban means 'southern barbarians' - a title seventeenth-century Japan gave to Southeast Asia countries such as Singapore and Indonesia, and, in a border sense, to all European-influenced things arriving in Japan through these countries. The name accounts for the rather un-Japanese way of cooking fish in this recipe: by frying then marinating in vinegary shoyu. This popular dish is served as an hors d'oeuvre in most Japanese restaurants and snack bars.
