Mackerel Tatsuta Fry
Saba no Tatsut-age

This dish takes its name from Tatsuta - an area within Nara, the ancient capital of Japan - where the method of marinating and then frying fish is thought to originate. Mackerel is much used in Japanese cooking, particularly at family restaurant and at home, because of its easy availability all year round. When it's really fresh, within hours of the catch, it can be eaten just vinegared, but otherwise it's best when partnered with strong flavours such as ginger and shoyu and then cooked.
