Cactus Tacos

My grandmother made the best nopales. Her cactus strips always had a soft crunch and lovely slick texture, a little like that of cooked shiitake mushrooms. One thing they were not was baboso, or "slimmy". Her secret was in her cooking method, which is a bit like that for cooking carnitas: You simmer the cactus in water and a little oil until the water evaporates and the cactus cooks further in the sizzling oil, which she said eradicates the baba.
