Baked Plantains
Plátanos asados

A long, whistle signals the arrival of the camotero, a vendor who pushes his old-fashioned cart, with its signature smokestack and wood fire that burns beneath. He sells camotes (sweet potatoes) and plantains, both slowly roasted until they're soft and sugary. A drizzle of sweetened condensed milk makes these an especially rich snack. Every so often, the vendor releases steam, producing that familiar whistle, an announcement to anyone in the square or houses nearby that the camotero has arrived.
