Chanterelles

There is nothing quite like it. You've been searching for ages and suddenly you see that one yellow little hat that gives a whole group of golden chantarelles away - hooray! All Swedish children are taught from a tender age to recognize chanterelles, and once you've managed to find a good chanterelles spot in the woods, you kept it a dark secret from everyone except your nearest and dearest. Often you have to look long and hard, but it really is worth all the effort.

Every year, at the beginning of October, we travel to Småland, the next province north to my home, to visit family and to pick funnel chanterelles. Once the Swedish elk hunting season begins, no one in their right mind would go into the woods to pick mushrooms for fear of being shot, so we have to time our trip carefully! My brother-in-law, Peter, grew up in the Småland woods and knows them well, but even so he always takes a compass so we can be certain of way home again.

In only a few hours we can pick anything from 5 to 10 kg (11 to 22 lb) of wonderful mushrooms each. The rest of the day is spent huddled in the kitchen, cleaning the mushrooms ready for dying. Once clean, we dry the mushroom at room temperature on sheets of newspaper, then when winter comes we can enjoy the fruits of our autumnal labours and cook many wonderful dishes that will remind us our day in the woods.
