Christmas ham

Place of honour on a Swedish Christmas buffet is always taken by the Christmas ham - a big, salt-curred ham that has been boiled or baked. Boiling the ham means you can make dopp i grytan (sops in broth), a much loved Christmas dish which involves dunking coarse rye bread or wort-bread in the salty, fatty broth in which the ham was cooked.
