Lahpet (Burmese Pickled Tea Leaves)

In the traditional Burmese dish laphet thoke, laphet is served on a bed of shredded cabbage and surrounded by piles of fried garlic, fried butter beans, roasted peanuts, toasted sesame seeds, tomatoes, green chilies, dried shrimps, fried shredded coconut, and dried ginger slices. It is dressed with lime juice, sesame or peanut oil, and Thai fish sauce.

- This unique ferment has a pungent, bittersweet flavour and is considered a digestive aid. It's a great way to make use of used tea leaves left over after Chinese or Japanese tea.
