Soup Perfumes

图片取自 金石堂網路書店

A good soup simmering on the stove top perfumes the whole house and warms the soul.

Italians use numerous words when talking about soups - brodo, minestra, vellutate, and zuppa, to name just a few - depending on whether they are describing a broth, a vegetable purée, or a thick soup enriched with beans, pastas, or rice. I like them all, from a delicate bowl of chicken broth simmered with noodles and spinach to a hearty porridge of vegetables, beans, and grains brightened with a shower of cheese.
