Swedish Toad in the Hole

My daughter Sara is to thank for this comforting dish. she first made this when she wanted to show our Italian exchange student a typical everyday Swedish meal, and this seemed the best way to demonstrate simple home cooking. If you are used to toad in the hole made with sausages, it may surprise you to see that the Swedish version is made with smoked bacon instead. But trust me, this version is quick to cook and delicious, especially when served with Lingonberry Jam and grated raw carrot.
