When I lived in Sydney many years ago, my favorite place to eat was a restaurant called Iku on Glebe Point Road. Back then, Iku was co-owed by Holly Davis, an excellent whole-food chef and cookbook author, who along with the other great chefs who worked there, created fantastic healthy meals and dessert daily. In the afternoons, they served a moist, nutty fruitcake called Bancha tea cake. Bancha tea is a Japanese tes similar in flavor to kukicha. Being tea lover that I am, I wanted to re-create it using Earl Grey tea. You can use any tea you choose here - or even orange juice if you like. This gluten-free cake is simple to make, has no added sweetener or oil, and actually improves after it sits for a couple of days.
NOTE: Since bergamot is what gives Earl Grey its distinctive flavor, if you're lucky enough to find fresh bergamot, substitute its zest for the orange zest.

When you spend your entire life in and around the city of Chicago, as it turns out, you fail to fully apprehend certain facets of rural life. Take, for example, the troubling case of the rooster. To Colin's mind, the rooster crowing at dawn was nothing more than a literary and cinematic trope. When an author wanted a character to be awoken at dawn, Colin figured the author just used the literary tradition of the crowing rooster to make it happen. It was, he thought, just like how authors always wrote things in ways other than how they actually happened. Authors never included the whole story; they just got to the point. Colin thought the truth should matter as much as the point, and he figured that was why he couldn't tell good stories.
